Vanilla Pudding with Strawberries and Marshmallows

Being from Utah, I have fully embraced the jell-o eating, loving stereotype we are known for. This dish can be served as a side to dinner or saved for dessert depending on your personal preference. 

It comes together in about 15 minutes and rarely has any leftovers to put back in the fridge. My boys love this stuff! You can make it stretch further by adding more cool whip and marshmallows, if you want or need to. Originally this recipe called for cheesecake jell-o. I didn’t have that on hand one day and ended up swapping it out for vanilla instant pudding. Turns out, my immediate family likes it better with vanilla. 

You can’t go wrong either way. As long as strawberries are in season, I highly recommend this dessert salad.

Equipment

  • 1 Hand mixer
  • 1 large bowl
  • 1 large spoon

Ingredients

  • 1 lb Strawberries sliced
  • 1 Instant Vanilla Pudding Mix (small box)
  • 3 6 oz Strawberry Yogurts
  • 12-16 oz Whipped Topping (Cool Whip)
  • 1 bag Miniature Marshmallows

Instructions

  • Using a hand mixer, combine the 12 oz of thawed whipped topping, strawberry yogurts, and vanilla pudding powder. Return to fridge for at least an hour before serving.
  • While the pudding mixture is setting, wash and slice the strawberries, then gently fold them into the pudding mixture.
  • Add miniature marshmallows and stir to combine.
  • If you feel more whipped topping is needed, you may add more at this step to get the consistency and flavor you prefer.
  • Return the fridge until serving.
  • Enjoy!
